Funfetti Birthday Cake Mug Cake | Slimming World

This recipe is Slimming World and Weight Watchers friendly
·      Extras Easy - HEb and 5.5 syns
·      WW Smart Points - 10
Ingredients
·      40g of porridge oats - HEb
·      1/4 tsp of baking powder
·      1/8 tsp of baking soda
·      1.5 tbs of sukrin (or another sweetener of choice) - 0.5 syns
·      2 level tbs of plain Greek Yoghurt
·      1/2 tsp of vanilla extract
·      1 large egg white
·      1 tsp of rainbow sprinkles - 1 syn
·      15g of white chocolate chips - 4 syns
Instructions
1.   Add the oats to a blender and blend till fine.
2.   Add to a mug
3.   Stir in the baking powder, baking soda and sukrin.
4.   Add the yoghurt, vanilla and egg white and stir till all is combined. (make sure all ingredients are mixed and that no dry oats left as it won't cook properly)
5.   Fold in 3/4 of the sprinkles
6.   Place in the microwave and microwave on full power for 1 minute and 50 secs. 
7.   Remove from microwave and allow to cool.
8.   Add the white chocolate to a bowl and microwave at 10 sec intervals until melted.
9.   Carefully spread or drizzle over the top of the cake then sprinkle with the remaining sprinkles.
10.  Dig in and enjoy!!
