Mexican Street Corn is a Mexican side dish that is very easy to make and contains many healthy ingredients that are good for your body. This is also known as Elotes which is usually sold in the taco cart inside a food truck.  If you held a small gathering at the house, then you can serve this as one of your main menus. Now, just follow the recipe below to make your version of Mexican street corn.
How to cook Mexican Street Corn
There are some traditional ingredients here that you might find a bit difficult to get. However, you may change it into other alternative ingredients. For instance, the Mexican crema probably a little too hard to find then you may change to any sour crème that you could find. Read this article until the end for the complete recipe.

Ingredients

·         6 until 8 medium sweet corns, you also need to remove the husk
·         120 ml of Mexican crema, or sour cream
·         120 gr of mayonnaise
·         120 gr of cilantro, finely minced
·         A clove of garlic, minced
·         One lemon, zest it into around 2 teaspoons
·         One lemon, squeeze into 2 tablespoons of juiced lemon
·         120 gr of crumbled cotija cheese
·         Chipotle pepper as the seasoning
·         Slices of lemon

Directions

1.      1Prepare the gas or charcoal grill and heat it up to 200 celsius-degree or 400 Fahrenheit-degree. While waiting for the gas or the charcoal grill to heat, you can prepare to cook the sauce. First, get a medium bowl then mix the Mexican sour cream, mayonnaise, cilantro, garlic, pepper and the lemon both lime zest and lime juice. Add salt if it is needed then set aside for a while.
2.      2Mix those ingredients until well combined. Then you can continue to get to the grill for cooking the corn. Simply put the corn onto the grill around 3 minutes and do not turn the corn yet. After the corn turns brown or partially burnt, you can turn the corn up and repeat the same step to the other side.
3.      3After all sides of the corn get burnt and turn brown, you can remove the corn from the grill and place in on a plate. Then it is time for the topping. Here, you can spread the corn with the help of a brush or spoon. Brush the crema mixture evenly then give crumbled cojita cheese on top of it. You may also add chipotle pepper as the topping. Finally, serve your Mexican Street Corn with the sliced lemon or lime wedges.
