TIRAMISU CUPCAKES

Ingredients

  • 175g butter
  • 175g self-raising flour
  • 175g caster sugar
  • ½ tsp baking powder
  • 3 large eggs
  • ½ tsp vanilla
  • Cocoa powder for dusting
  • COFFEE SOAK
  • 1-2 tablespoons coffee liqueur (optional)
  • 3 tablespoons sugar
  • 350ml hot coffee
  • MASCARPONE FROSTING
  • 500ml double cream
  • 50g icing sugar
  • 1 tup (250g) mascarpone cheese
  • 1 teaspoon vanilla extract

Instructions

1.       Preheat the oven to 180°C /350f
2.       Line a 12-hole muffin tin with paper cupcake or muffin cases.
3.       Put all the cake ingredients into a large bowl and beat with an electric whisk until light and fluffy.
4.       Divide the mixture equally between the paper cases.
5.       Bake for 20-25 minutes or until the cakes are well and golden brown on top.
6.       Transfer to a wire rack to cool
COFFEE SOAK
1.       When cakes are cool
2.       Mix together all the ingredients for the hot coffee soak.
3.       Dip the bottom of each cupcake into coffee soak for 2 seconds.
4.       Put back on the wire tray
MASCARPONE FROSTING
1.       Beat the cream with an electric mixer until soft peaks form. Add the icing sugar.
2.       Beat on medium until nice and stiff.
3.       Add the mascarpone cheese and vanilla extract. Beat until silky smooth and nice and thick enough to pipe.
4.       Transfer the mascarpone frosting to a piping bag.
5.       Pipe a swirl onto each cupcake and dust with cocoa powder.
