How to make
Italian Ricotta Cookies
If you want to serve this later or in another day, you may
place the Italian Ricotta Cookies in an airtight container. Also, make sure you
make it into one layer and enjoy these yummy and sweet cookies anytime you want
with family and friends.
Ingredients:
- 495 gr flour (all purpose)
- Two teaspoons of baking soda
- Salt
- A cup of softened unsalted butter
- 370 gr granulated sugar
- A teaspoon of lemon zest
- 400 gr ricotta
- 350 ml fresh milk
- A tablespoon of vanilla extract
- Two large beaten eggs
For the glaze:
- A tablespoon of melted butter
- 460 gr powdered sugar
- 30 ml lemon juice or you may use almond extract or milk
- A teaspoon of vanilla extract
- 60-90 ml fresh milk
Directions:

1First, you need to prepare a mixing bowl to
whisk some ingredients like the baking soda, flour, and salt for around 20
seconds until they are well combined. Then, set this aside for a while and
prepare an electric stand mixture equipped with the paddle attachment to stir
other ingredients.

2Combine the lemon zest and granulated sugar
until they turn fluffy. After that, add the ricotta along with the vanilla
extract and the eggs. Lower the speed and put the flour mixture occasionally to
combine with lemon mixture. Here, make sure that all ingredients are well
combined.

3Next, use a plastic wrap to cover the bowl and
put it in the refrigerator to chill for around 2 hours. After that, take the
dough out of the refrigerator and scoop a tablespoon of the dough to form into
several balls. Then, place them on top of the baking sheet that has been lined with
a parchment paper.

4To continue, bake the cookie balls in the oven
over 350 Fahrenheit-degree or 180 celsius-degree for around 12 to 14 minutes
until they turn golden. After that, allow them to cool for some minutes before
you transfer them into a wire rack. While waiting to cool, you may use the time
to make the glaze.

5Simply prepare a mixing bowl and combine some
ingredients like powdered sugar, lemon juice, powdered sugar, vanilla, and
milk. Mix them until well combined. After that, your glaze is ready to use and
combine to the cookies.

After the cookies get cool enough, you can give
the decorations to the cookies. Here, you need to dip the cool cookies into the
glaze. Then, immediately drizzle some sprinkles on top of the glaze. Before
serving, you need to allow the cookies and the glaze along with the sprinkles
to set for several minutes at room temperature.
