This is the best crumb cake ever. It has almond flavor throughout, the crunch of toasted sliced almonds, and the perfect ratio of crumb topping to cake, about 1:1. My Almond Crumb Cake Recipe is perfect for breakfast or dessert with a cup of coffee or tea.

Ingredients
Batter:
·         2 tbsp butter softened
·         2 oz cream cheese softened
·         1/3 cup 
·         4 eggs
·         2 tsp almond extract
·         4 oz half and half
·         1/2 cup 
·         1/2 cup coconut flour
·         1/2 cup ground golden flax or additional almond flour
·         1 tsp baking powder
·         1/4 tsp. salt
Topping:
·         6 tbsp butter melted
·         1/3 cup 
·         1 cup almond flour
·         1 cup sliced almonds toasted
Instructions
1.    Preheat oven to 350. Grease a square 8x8 pyrex with butter or cooking spray.
2.    In a bowl with an electric mixer combine all the batter ingredients. Mix thoroughly. Pour into the baking dish and spread evenly.
3.    Combine topping ingredients and mix until crumbs form. Sprinkle on top of the batter.
4.    Bake at 350 for 40 min until golden. If the topping starts to get dark cover with foil for the last 10 minutes.
