FRESH PEACH CAKE RECIPE (QUICK AND EASY)

Ingredients:
  • 2 large eggs
  • 1/2 cup (110 gr) granulated sugar + 1 tbsp. for topping
  • 3/4 cup olive oil
  • 3/4 cup plain whole milk yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (210 gr.) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 medium peaches, cut in half and sliced
  • 2 tablespoons pistachios, chopped


Instructions:
  1. Preheat the oven to 350F.
  2. Grease and flour a 9-inch baking pan.
  3. In a large bowl using handheld mixer beat together eggs and sugar until slightly pale color, about 2 minutes.
  4. Add the olive oil, yogurt, vanilla extract and mix again until everything comes together about 1 minute.
  5. Over the mixture sift flour, baking powder, and salt and mix until the batter is smooth.
  6. Pour the batter in the prepared baking pan. Arrange peach slices on top. Sprinkle with the pistachios and remaining tablespoon of sugar.
  7. Bake for about 40-45 minutes or until a toothpick inserted in the middle comes out with tiny crumbs.
  8. Let cool in the pan for about 10 minutes. Carefully transfer cake to a serving plate.
  9. Serve plain or with ice cream.
