INGREDIENTS

2 garlic
cloves , unpeeled
·
2 cups canned
chickpeas , (342g, 12 ounces)
·
1/4 cup lemon
juice , (60ml)
·
1/3 cup tahini , (67g,
2.5 ounces)
·
1/2 teaspoon kosher
salt
·
1/4 cup extra-virgin
olive oil , (60ml), plus more for drizzling
·
paprika , for
garnish
INSTRUCTIONS
1. Heat a small skillet over medium heat.
Toast garlic until the outsides are browned, shaking pan occasionally, about 8
minutes. Peel garlic and set aside.
2. Drain the chickpeas, reserving 1/4 cup
of the liquid.
3. Rinse the chickpeas under cool water.
Use fingertips to remove the outer skin and discard. Set
aside. Alternatively, the chickpea skins can be kept on. However, the
hummus may not be as smooth.
4. In a food processor or blender add 1/4
cup of the reserved chickpea liquid, lemon juice, and tahini.
5. Process on high speed for 1 minute,
until frothy.
6. Add chickpeas, garlic cloves, salt and
olive oil.
7. Process on high speed for 1 minute.
Scrape down the sides.
8. Process on high speed until smooth,
about 2 minutes.
9. Taste the hummus and season with more
salt as desired.
10. Serve immediately drizzled with olive
oil and sprinkled with paprika.
