Blueberry Chia Jam



Blueberry Chia Jam

Ingredients
  • 1 cup (148g) Blueberries
  • 2 tablespoons Chia seeds
  • 1-2 tablespoons lemon juice
  • 1 Cup water
  • 2 tablespoons low carb sweetener


Instructions
1.       Place the bluerberries, low carb sweetener, lemon juice and water in a saucepan.

2.       Bring to the boil, cover and simmer for 10 minutes until the berries are softened.

3.       Remove from the heat and add the chia seeds. Stir thoroughly.

4.       Allow to cool and then transfer to a jar with a tight fitting lid.

5.       Store in the fridge.
